Oh-lala, what has our chef Robert conjured up here again? Grilled watermelon combined with caramelised goat's cream cheese and mint oil? How fancy is that? This appetiser recipe is guaranteed to score points at your next summer party. Happy cooking!
List of ingredients for 4 people:
- 1 small watermelon
- 400g goat's cheese
- 100g filo pastry
- 1 bunch of mint
- A handful of watercress and beetroot leaves
- 40g cane sugar
- 40g butter
- 2dl olive oil
- A few sprigs of thyme
Preparation:
Watermelon:
- Peel the watermelon and cut 4 even slices (approx. 3 cm) from the middle section
- Remove the seeds if necessary
- Brush lightly with olive oil and grill on both sides in a hot grill pan or on a charcoal or gas grill
- Set aside and leave to cool at room temperature
Filo pastry:
- Spread the filo pastry on baking paper and brush evenly with melted butter
- Bake in the oven at 180° until the filo pastry is golden yellow and crispy
Mint oil:
- Chop the mint, add to 1.5dl olive oil and puree with a hand blender
- Pass the resulting paste through a sieve & chill the green oil immediately
Goat's cheese:
- Cut the goat's cheese in half and sprinkle the cut surface with cane sugar
- Caramelize with a Bunsen burner or in the oven with top heat
- Leave to cool slightly and sprinkle with thyme
Garnish:
- Wash and pluck the watercress and beetroot leaves, marinate with a little olive oil
- Break the baked filo pastry into a rustic shape and arrange everything as shown in the picture
