Autumn is knocking at the door, even in the kitchen. Seasonal cooking is close to our hearts. That's why our chef Robert has created a seasonal focaccia with fresh figs, rosemary and fresh goat's cheese. Mmmm - what an explosion of flavour. ‘Re-bake’ highly recommended!
Ingredients list for 1 tray:
Dough
- 250 ml warm water
- 1/2 cube fresh yeast
- 1 tsp salt
- 3 tbsp extra virgin olive oil
- 400 g white flour
Topping
- 4 tbsp extra virgin olive oil
- 150 g goat's cheese
- 5 fresh figs
- 1 handful of fresh rosemary sprigs
- 1-2 tbsp honey
Preparation:
- Dissolve the yeast in the warm water, mix in the salt and olive oil.
- Add the flour and knead the dough for approx. 10 minutes until it is soft and sticky.
- Cover the dough and leave to rest at room temperature for 30 minutes until it has doubled in volume.
- Place the dough on a baking tray lined with baking paper and carefully spread out.
- Spread 1 tablespoon of olive oil over the dough, leave to rest again for 30 minutes.
- Preheat the oven to 200 °C top and bottom heat.
- Top the dough with the goat's cheese, figs and rosemary and bake for 15-20 minutes until golden brown.
- To finish, drizzle honey over the warm focaccia and serve immediately.
